A blend of Chardonnay and Pinot Noir, producing a classic sparkling wine. To optimise fruit conditions we harvest the grapes under moonlight in the cool of the night. Specially selected cuvees from three vintages create this consistent, complex and gently effervescent style. Serve chilled.

Presently, the wine is of a deep vibrant colour exhibiting black boy plums, blackberry with hints of tomato leaf and herbs. Chocolate/roasted coffee bean starting to show along with spice and toasty oak. A firm full palate densely packed with fine tannins, succulent ripe fruit in the middle well integrated with toasty oak.

The palate is quite full flavoured, with spicy peppery overtones from the Shiraz, and blackcurrant flavours from the Cabernet. Medium weight tannins balance the acid resulting in a smooth, pleasant finish.

The colour is medium straw with a fine continuous bead. The nose has lifted fruit characters with some slight 'toastiness'. This characteristic shows the benefits of blending both aged and young wines to give this consistent style. The palate is soft and full flavoured with a good 'mousse'.
